Stuffed pumpkin protein cookies

Finishing out October and Halloween with some stuffed pumpkin protein cookies!

We’re finishing up October (and celebrating Halloween) with one last pumpkin-based recipe from Heidi.

So you’ll probably have trick-or-treaters coming by the house, which means keeping a big bucket of candy on hand … which means temptation to blow your diet sitting right there all night, especially if you have leftovers.

Before the festivities, try baking up a batch of these pumpkin protein cookies. Not for handing out — unless you’ve got a bunch of ripped 8 year olds running around the neighborhood — but to stave off temptation and get a little extra quality protein support.

Instructions
  1. Add all ingredients together and drop onto a sprayed baking sheet.
  2. Make an indent in each cookie and add 1/2 tsp of P28 almond butter spread.
  3. Bake for 8-10 minutes in the oven at 365 degrees.
