  1. Mix protein powder with yogurt + whey + almond milk + PB2 in a small bowl and slowly add in the Splenda and baking powder last.
  2. Put on a small plate with a spoon and spread out to form a small cookie shape.
  3. Microwave for 45 seconds to 1 minute and allow to cool for 3-5 minutes as the cookie will slowly harden up.

The 1-Minute PB Marshmallow Cookie Recipe Transcription

“Back again with another Cellucor recipe, Chef Bob at it again with a very simple and very easy recipe. This is gonna be a 1-minute cookie, I know a lot of people like convenient recipes, not long, strung-out baking recipes. Today it’s very simple and very short.

Dry Ingredients

What we’re gonna make today is a 1-minute peanut butter marshmallow cookie. So what we have today is all our dry ingredients in a small bowl here, which is 20 grams of the Peanut Butter Marshmallow or a little over half a scoop. I used about a tablespoon of PB2 because it enhances the peanut butter flavor, a teaspoon of baking powder, one Splenda packet for sweetener.

This recipe was made using Cellucor’s COR-Performance Whey, constantly rated one of the best protein powders on the market!

Wet Ingredients

And what I’m gonna add wet ingredient-wise is just a tablespoon of Greek yogurt and a touch of almond milk. So I’m gonna put just a little dash (of milk), that’s really all you need, five grams or so just to keep it wet and also so it doesn’t dry out when you cook it. And the Greek yogurt again is just a tablespoon, it’s used that way as it doesn’t dry out when you do bake it in the microwave.

Cooking Instructions

Now people make microwave cookies that aren’t that wet, and they wonder why it tastes like cardboard. That’s why. And honestly, you just mix this up and it’s going to be very thick, you might have to add just a touch of water or maybe a little bit more almond milk. It should look like a complete paste, and that’s exactly what you want, because when you microwave it it will expand.

(Mixing) So I got this pretty good now, and once you get a very thick consistency and it’s very hard to swirl at the bottom, just take it and transfer it right to the middle (of the microwave-safe plate). Try to pile it up, because it will just expand on its own, but when you microwave it it will also expand so don’t worry too much in the end.

So it should look like a little cookie on the plate. I’m going to pop this in the microwave for about one minute on high, and I will report back then.

OK, one minute in the microwave and it’s filled the entire plate. So just to give you a better visual, you can take a fork and pick the whole thing up, and you have yourself a nice big cookie. The crazy thing is, this whole cookie is just a touch over 100 calories. It’s 20 grams of protein, 9 grams of carbs and 2 grams of fat. And it’s a very soft cookie, the top is still a little soft, not hard at all and very versatile. You can take it with you on the go, put it in a little Ziploc bag, top with Walden Farms or whatever you want. Very simple, very easy, one-minute cookie, give it a shot!”
