If you can’t watch the video right now, the story goes that PJ is friends with an ice cream expert who asked if he could try using Blackstone Labs protein powder to make a high-protein ice cream. PJ declined, saying that he hated products like Halo Top so much that he didn’t even want to bother with that niche.

Our famed ‘ice cream guy’ disregarded that, took the protein powder, and sent back what would turn out to be Blackstone Labs ISO-Cream – and no joke, it tastes like legitimate ice cream!! Only there’s actually protein in this one, unlike the “competition” at the grocery store!

ISO-Cream’s Macronutrient / Nutrition Stats

Before we dig in, recall what PJ said about the labeling in the video above: the FDA requires a ⅔ cup serving size, but let’s be realistic — you’re going to eat the entire damn thing in one sitting.

Legally, they have to do 2/3 cup as a serving. But realistically, we’re eating this entire thing, so both calculations are shown!

So we’re listing the entire tub’s macros (showing Mint Chocolate Chip flavor):

  • Calories: 266
  • Protein: 38g
  • Fat: 7g
  • Saturated: 4g
  • Carbohydrates: 14g
  • Fiber: 1g
  • Sugar: 11g

Given that there’s milk inside, the 41mg cholesterol is impressive and shows that they’re sticking with a pure whey isolate. So with that, let’s move on to the actual ingredients:

Take a look at the image above and see that there are two sections – the main ingredients up top (Isolation whey protein isolate milk, cream, and vanilla), and then the other ingredients at the bottom with the thickeners:

    The secret weapon: the ultra-clean Blackstone Labs ISOLATION whey protein isolate powder!

    Now for the big show: Blackstone Labs’ own whey protein isolate, Isolation!

    This protein alone has quite an impressive label – each 29g scoop contains 24g protein (83% protein by weight – a solid score!) and just 1g fat and 2g carbs.

    Our guess? A full scoop of Isolation in each and every pint of ISO-Cream! Don’t quote us on that though, but this gets our macros to line up perfectly.

    Note that Isolation comes in chocolate and vanilla, so we’re guessing they’re using the vanilla here and then adding additional flavors (such as mint) later on for the mint chocolate chip.

  • Milk

    As mentioned in PJ’s video, our ice cream man is doing it right — by making it with milk. PJ mentions skim milk in the video, but the label doesn’t specify that. After speaking with PJ’s ‘guy’, we now know that this is a mixture of milks that works best in ice cream – so we don’t know what percentage milkfat it ends up on.

    Either way, we’re not expecting zero-fat milk since we have cream as the next ingredient – might as well use the true fat source to do the heavy lifting.

    This is a good start, because this brings some of the carbs needed to balance out the whey isolate protein powder – no reason to avoid the milk and cream!

  • Cream

    This is ice cream, after all! In order to get true creaminess, you need the real deal – cream. We’re guessing that this is going to provide nearly all of the fat, which still isn’t that much in the tub.

    High-Protein Ice Cream

    If you’re looking for actual high-protein ice cream… this is the first time we’ve really been impressed by a label

    Light cream likely used here?

    Trying to deconstruct this product here… in order to make the math work on this formula, we need a decently high amount, which leads us to believe that this is a light cream of some sort – not the full-fledged heavy kind.

    With a greater amount of light cream in ISO-Cream (as opposed to just a small amount of heavy cream), you keep the fat low, and this is ultimately a lower-fat, moderate-carb, higher-protein ice cream.

  • Vanilla

    For the most part, Blackstone Labs Isolation’s vanilla flavor is what was used here, but apparently when it comes to ice cream, you need to add even more vanilla extract!

If we’re close to being right about this formula, then it’s a brilliant move.

There’s a sweet irony in removing the sugars and fats from milk in order to create the whey protein isolate, but then adding them back in the form of skim milk and light cream to get our macros and texture profile to where we want them to land. but it ultimately works and the initial taste test was evidence of that.

But now for the other ingredients:

  • Thickeners

    To get things to stick, Blackstone Labs’ ice cream connoisseurs are going to need to be okay with several gums, sugar alcohols, and artificial sweeteners.

    Of note, we have both xanthan gum followed by cellulose gum as a one-two- thickening punch.

  • Sweeteners

    Here’s where things get interesting! Then come the sweeteners, which has literally every sweetener we can think of, in the form of Hi-Tech Pharmaceuticals’ Naturally Sweet blend of erythritol, maltitol, maltodextrin, xylitol, and sucralose.

    Tagatose and acesulfame potassium (ace-k) are also found inside, as is sugar, glycerin, and more erythritol later on down.

    What is tagatose?

    This is a low-calorie monosaccharide that’s shaped similarly to sucrose (table sugar) but has only 38% of the caloric load while being 92% sweet.

    It was given GRAS status (generally regarded as safe) in 2003, so it’s been around longer than some other sweeteners on the market!

    Back to the blend… it’s pretty clear that if you’re sensitive to artificial sweeteners or sugar alcohols, ISO-Cream isn’t going to be for you. There are few sweeteners not listed here!

  • Everything else

    The formula is filled out by the colors (in the case of mint chocolate chip) and additional flavors, as well as emulsifiers like soy and/or sunflower lecithin.

Overall a packed profile. The top part with milk and cream is what we find interesting, while the sweetener blend is on a whole new nevel!

Mike quickly reviews the mint chocolate chip ISO-Cream flavor at the 2018 Arnold. It was just one bite, but it was definitely a spot-on bite!

If this is as successful as we think it’s going to be, they’ll be coming out with more flavors soon. Cookies & Cream anyone? Cherry Jared PJ?

More info from the Ice Cream Man

We’ve updated this post with some new info, as we’ve now spoken with the man at the creamery. Here’s a few more interesting notes:

  • These are made in a hand-batched, cold process. You pasteurize everything after it’s mixed (typical of some commercial processes) because the whey isolate wouldn’t mix. So it needs to be hand-spun, cold style, and that’s labor-intensive.

  • It took two years to perfect this process.

  • As mentioned above, don’t sleep on Hi-Tech Pharma’s Naturally Sweet blend of sweetener. This works really well in an ice cream setting.

  • They’ve perfected their dry ice game over the years. This took a bit of work, and even FedEx and UPS’ suggestions didn’t fully pan out. Shipping only on Mondays and Tuesdays also prevents headaches.

    They’ve had shipments stay frozen even when held up for a couple of days due to bad weather / disasters — but usually it arrives faster and even colder. However, if something bad were to happen and your ice cream would melt, they’d make sure you’d get taken care of.

Hell yeah this is happening

No matter what the diet, we’ve learned that success when it comes to body composition relies on keeping protein high enough once you’ve figured out your calorie goals (“low-fat”, “low-carb”, or “balanced” is up to you).

All these “health-conscious” brands you see at the grocery store are focusing on things most of us fitness freaks don’t care about – low-calorie, dairy-free, vegan, etc… but PJ knows better. PJ knows that true ice cream lovers are cool with the dairy and a fair amount of calories — the athletes out there just want it heavy on the protein so these snacks stop screwing up our macro ratios!

So thank you Mr. Braun, and thank your ice cream man for us too – because if these tubs come out as delicious as the samples at the Arnold… the ever-failing game of “healthy ice cream” has finally been disrupted.
